My Amazing Egg Sandwich
I haven’t really been wanting to cook much lately, I mean I used to cook all the time, and I have piles of recipe books that I actually used to use. I thought it was because in my line of work and having a family I sometimes cook four times a day, and it can get pretty monotonous, to the point where meals have become basic, quick, and bland. The sad thing is I don’t care, then at Christmas my boyfriend bought me beautiful Tivoli red (my new favorite color) enamel cookware, which I really needed because my cookware was small and some was just plain dangerous. Still I didn’t get that old excitement I used to get when I would find a new recipe I wanted to try.
Just recently our fridge broke, its been a real pain, everything on top shelves would get icky warm, like milk and juice and everything toward the bottom would freeze, like lettuce, fruits, etc. I have been trying to work with it by putting my milk on the bottom and my produce on the top but a couple mornings I had to microwave my daughters cereal because the milk came out in a frozen clump and looked like ice cream on her fruit loops. Last weekend my thoughtful boyfriend bought me a refrigerator, and not just any fridge, this is a custom cherry wood fronted, 28 cubic foot, mac daddy of a cooling machine! It’s so awesome, and huge, our other fridge was packed and dark and you always lost stuff into the back never to be seen again. This one has roll out glass shelves and multi-level lights so you can see everything and it looks practically empty even with all the food from the other one. It’s really fantastic and the best thing is it makes the food look pretty, so nice in fact that today I woke up and all I could think is I want to cook something.
I cooked an old favorite of mine but better, here’s my Amazing Egg sandwich:
Two pieces wheat bread, lightly toasted, spread miracle whip on one margarine or butter on other
One to two eggs fried hard, yolks broke, salt and pepper lightly
Thin slice of ham, ( I Just used lunch meat) throw it on when egg is done before cheese
One slice sharp cheddar melt onto ham
One slice mozzarella melted onto cheddar
Throw the whole mess onto your toast cut it in half and enjoy!



Isn’t it funny how a new appliance can effect the things you want to do. Sandwich sounds very good.
